Buddha bowls are my go-to as well! Lately I've been enjoying a "sushi" style one with black rice, sweet potato, asparagus, sauteed kale, spinach and beet greens, tofu, raw shredded beets or carrots, avacado, pickled ginger, sesame/seaweed flake topping and a ume vinegar, soy sauce and miso dressing!
